Lemon Pie Bars
What could be better than lemon pie in a bar? So refreshing and satisfying!
These are a cinch to make and are great to get the kids involved with.
You will need:
Crust
-1/2 Cup brown sugar
-2 Cups flour (I use a whole grain flour)
-4 Eggs
– Olive oil for greasing the 9×13 pan
Lemon Top
-1 Cup powder sugar
-1/4 Cup Flour
-3 Lemons juiced
-2 Eggs
-lemon zest from the juiced lemon
-salt for soaking lemons
Soak the lemons for about 10 minutes in a bowl of 2 cups water and 1 teaspoon salt.
This will rid the lemons of the waxy coating.
Mix together the brown sugar, 2 cups flour, and the 4 eggs. Press the mixture into your 9×13 pan greased with olive oil. Bake for 15-20 minutes on 350 degrees.
Juice the 3 lemons and keep the pulp in the juice. Grate the yellow colored part of the rind with a cheese grater. Get as much as you can off, and add it to the lemon juice.
Mix in 2 eggs into the lemon juice.
Add the 1/4 cup flour and 1 cup powder sugar to the lemon juice and whisk well.
Pour the mixture over the warm crust. Bake for 20-25 minutes on 350 degrees.
Remove from the oven and allow to cool. These are also delicious served warm!
Cut into squares and enjoy!
