Butter Carrots and Grilled Chicken

These Butter Carrots are one of my favorite carrot recipes!

The carrots have the best savory taste with the perfectly-cooked onions and green peppers sauteed in real butter.

I tried cooking my carrots this way several years ago and have never stopped.  

Even if you are not an onion and green pepper fan you still will want to cook the carrots with them. When they are done cooking just only eat the carrots.

The taste is AMAZING!

What you will need:

16 oz. bag of baby carrots

1 small Vidalia  Onion (I use the whole onion, but you add what you prefer.)

1 Green Pepper ( Again, add what you like. I use the whole green pepper.)

3 Tablespoons of REAL Butter (Make sure that you use a good tasting real butter.  There is a HUGE DIFFERENCE in taste between the store brand and some of the good quality name brands.)

1/4 Cup of Water

 

What you will need to do:

Melt the butter in your pan over medium heat.

Once the butter is melted add the chopped up onion and green pepper.

Carefully toss the onion and green pepper in the melted butter.

Now add the washed baby carrots AND the 1/4 cup of water.

I cook my carrots in a covered pan  on a low heat until they are tender.  Gently stir them periodically. 

 

 

Mouth Watering Grilled Chicken

The Grilled Chicken was cooked to perfection by my son.  I love having a son who will grill for me!  Makes mom life a lot sweeter. 🙂 

He grills chicken to where it is deliciously tender and packed full of flavor! 

The carrots and chicken went so good together I decided to put them in the same blog post.

What you will need:

Fresh Boneless Chicken Breast Filleted or use chicken tenders ( They will not be as tender and good if you do not fillet the chicken breast.)

Dry Rub Savory Barbecue ( We used Weber for Smoking and Barbecuing.)

A Barbebue Sauce of your choice.

A Grill ( We use a charcoal grill.)

What you will need to do:

Fillet your fresh chicken breasts with a sharp fillet knife or use chicken tenders.

Rub each piece of chicken with the dry rub.

Make sure that you have your grill fired up and hot, but not too hot. Shooting flames is a no-no.  You want an even hot grill.

Watch your chicken carefully! There is nothing more dissappointing than burnt chicken.

Pour your barbecue sauce of choice in a bowl. Get a basting brush to spread the sauce on the chicken from time to time.   Keep your chicken moist with the barbecue sauce as it cooks.

The internal temperature of your chicken should reach 165 degrees.
